Smoked Salmon Fish Balls

1-lb alder smoked salmon flaked
2-eggs well beaten
1/2 cup parmesan cheese
1/2 cup breadcrumbs
1-tsp salt
1-tsp black pepper
2-cloves crushed garlic
1/2 cup olive oil

In a large bowl add all the ingredients except the olive oil.
Mix very well, form into 3 inch balls.
Heat olive oil in fry pan on med/hi heat.
Add the balls and cook about 4 minutes each until golden brown.
When your done drain on paper towels and serve with your favorite tomato sauce.
Makes enough to feed about 5 salmon lovers.
